Royal cheesecake is a cottage cheese pie, very tasty and unlike ordinary cheesecakes. I don’t know how similar my version turned out to the original recipe, but the diet royal cheesecake is an incredibly tasty dish. Plus, as always, useful.

Calorie content of dietary royal cheesecake per 100 g. is: 179 kcal. Nutritional value per 100 g: proteins: 12 g, fats: 2.6 g, carbohydrates: 27 g.

Ingredients(I made it in a small rectangular shape):
Rye flour: 70 gr.
Corn flour: 100 gr. (you can use any flour you like)
Egg: 2 pcs.
Low-fat cottage cheese: 300 gr.
Honey: 50 gr.
Soda slaked with vinegar or lemon juice: 1/2 tsp.

Do you know what I like about the Dukan Diet? With your recipes for desserts, pastries and bread. And even if you (like me) don’t adhere to it, then it’s definitely worth turning your attention to the Dukan menu! After all, all sweets are without flour, sugar and butter. Today I will share with you a recipe for diet cheesecake, which I have already tried.

At the end of the post there will be important tips and notes! Be sure to read them to make your baked goods truly delicious.

So, the basis:

  • 2 eggs;
  • 2 tbsp. (18 g.) oat bran;
  • 1 tbsp. (6 gr.) wheat bran (I have it with flax seeds)
  • 0.5 tsp baking powder;
  • 3 tbsp. kefir 0% fat or 2 tbsp. 0% fat yogurt without additives;
  • 5 gr. sweetener Fitparad;
  • vanillin on the tip of a knife.


Filling:

  • 1 egg;
  • 2 tbsp. 0% fat yogurt without additives;
  • 200 gr. soft cottage cheese;
  • 200 gr. dry cottage cheese;
  • 8 gr. sweetener Fitparad.

First you need to bake the base (10 minutes) and only then pour the curd filling onto it. Leave in the oven for another 25-30 minutes, then cool completely. Best of all is overnight in the refrigerator.

Don't try to eat it while it's hot! It will have a very strange consistency and taste :)

  • Beat the eggs well, you can even add a pinch of salt for a stronger foam
  • It is better to grind bran (both oat and wheat) into flour in a coffee grinder or powerful blender. If you do not do this, then you must first soak them in kefir for 15-20 minutes, and add them to the eggs together. Otherwise, they will grind on your teeth and spoil the delicate taste of the cheesecake.
  • Check the composition of the bran. Manufacturers now include flour and SUGAR even in bran, I personally saw these! It was written “Crispy with cranberries” and they looked like balls. These are absolutely not suitable for us. You need simple bran without everything or with useful additives such as flax seeds, like mine.

To make the filling delicious:

  • You also need to beat the egg thoroughly until foamy.
  • If you are not on the Dukan diet, then, of course, you are better off taking 5% fat cottage cheese. Because low-fat cottage cheese is less tasty when baked, and from some manufacturers it even becomes like rubber.

By the way, according to this diet, the amount of bran in the entire cheesecake is calculated for 2 days. Therefore, you can eat half a day without any twinge of conscience! If it works out, of course, because a healthy diet cheesecake is very filling! You know what else I like? You can cut it into small portions and easily give it to your child at school, or take it with you to work to take part in office tea parties :)

And yet, it’s better to take a small form to make it taller. Such as are used for bread and rectangular muffins. I had a large and round one, so the cheesecake turned out a little low, but this does not affect the taste. I don’t adhere to Dukan, so I had a piece of this cheesecake with fruit yoghurt sauce for breakfast! But, as far as I remember, Dukan allows 1 cup of 0.1% yogurt as an ADDITIONAL option at the rotation stage.

Advice. For dessert to have a royally delicate taste, take home cottage cheese. Some of the sugar can be replaced with honey or maple syrup, and instead of baking powder, use soda and citric acid.

Preparation progress:

Step 1. Grate the butter, set aside a small piece for greasing.

For those who prefer to use modern household appliances, we have adapted the classic recipe. The products used are the same as in the previous case, so we will not repeat them. You can prepare the dough step by step, as indicated in the basic recipe.

To bake a pie, you need to grease the bowl with oil, lay out the dessert in layers and set the “Baking” mode. In most multicooker models, dessert will be ready in an hour and a half. After the signal, you should not switch to the “Warming” program; on the contrary, you need to remove the bowl and let the treat cool at room temperature. After this, you need to decorate the cheesecake, cut it and serve it.

Tip #1. To make the pie bake better, you can make several layers of dough and cottage cheese. To do this, the crumbs and curd mass need to be laid out in thin layers, often alternating.

Tip #2. Baked goods can be easily removed by cutting two wide, long strips of baking paper and placing them crosswise on the bottom of the multicooker. They need to be covered with a regular round sheet on top. The ends should be long and extend beyond the edges of the baked goods. Step-by-step cooking instructions:

1. Take a bowl, break the eggs into it for the dough, add sugar, salt and sour cream. All products must not be cold.

2. Melt the butter and pour it into the dough. If chocolate is used instead of cocoa, then it should also be softened at this stage.

3. Combine flour with baking soda or baking powder, add cocoa. Sift everything into a bowl with liquid ingredients. If you want the pie to have a pleasant cinnamon or nutmeg flavor, you should also add spices to the flour.

  3. Add soft butter to the mixture and continue fluffing, add sour cream and mix.
  4. Sift flour with baking powder. The result will be a plastic workpiece.
  5. Grind the cottage cheese and two yolks, add from a few spoons to 3/4 tbsp. sugar (depending on the desired sweetness), add vanilla. This will give us the second mass for the pie.
  6. Preheat the oven to 200°C.
  7. Take a mold, grease it or cover it with paper, roll out the dough so that you get a thin cake with sides. Place the curd mixture inside. Set to bake.
  8. You need to keep the pie at 200°C until almost ready. During this time, you can make a protein mass.
  9. Take the whites in a clean, non-greasy bowl and beat them a little with a mixer. Gradually increase speed and add sugar. Usually 3/4 cups is enough, but you can use more or less depending on the size of the eggs. For this recipe, the protein mixture should be slightly less thick than regular meringue.

  4. Combine all the ingredients for the filling and puree well again, you should get a homogeneous paste.

  6. Take a dry mold and grease it with a thin layer of vegetable oil.
  7. Place 2/3 of the oatmeal crumbs on the bottom, distribute the curd mass on top and sprinkle evenly with the remaining crumbs.

This pie can be prepared for vegetarians, or if you are out of eggs at home and don’t want to go to the store. The combination of cardamom and lemon zest gives the usual dessert a sophisticated note.

  • 3-3.5 tbsp. flour;
  • 200 g butter or margarine;

  • a bag of coffee or a couple of spoons of cocoa;
  • 2-3 tbsp. l. condensed milk;
  • 0.6 kg cottage cheese;
  • 5 tbsp. l. sour cream;
  • jam and chocolate (optional);
  • 50-70 g plums. oils
  • 3-4 tbsp. Sahara
  • vanilla.

Advice. It is most convenient to prepare a cake in a square shape. You need to choose the size of the dishes and cookies so that they fit without voids.

Making quick cheesecake:

  1. Pour 150 ml of water over coffee or cocoa, add condensed milk, stir everything well.
  2. Place baking paper on the bottom.
  3. Grind soft butter and sugar, the quantity of products can be changed. Add cottage cheese and vanilla, make a homogeneous mixture. Add sour cream and mix everything again. The most convenient way to prepare the cream is with a blender, but you can do without it.
  4. Pour the coffee into a bowl. Dip each cookie in coffee so that it is slightly soaked, but not soggy. Place them in the mold next to each other without voids - this will be the cake.
  5. Cover with curd mass (a third of the total amount is enough for the first layer). If jam is used, then spread a thin layer of jam on the cottage cheese.
  6. We repeat the operations again until the products run out. The cookies can be placed on the top layer as usual or crushed into crumbs, so the dessert will look more like a classic cheesecake.
  7. Leave for 40 minutes at room temperature so that the cookies are well soaked, and then put in the refrigerator.
  8. At this point the cake can be considered ready, but we will continue a little and decorate it with chocolate.
  9. Melt the chocolate with a small amount of butter, cool the mixture (it should be liquid, but not hot). Take the cake out of the refrigerator and pour chocolate over it. If desired, sprinkle powder or nuts on top. You can serve immediately or after the glaze has hardened.

The dough for this pie is maximum simple, and the filling turns out to be very soft and juicy, due to the fact that cream and starch are added to it.

For the test you need

  • 0.5 packs of margarine at room temperature;
  • 1.5 tbsp. flour;
  • 0.5 tbsp. Sahara;
  • baking powder.

For delicate cream:

  • 1 kg of non-crumbly cottage cheese;
  • 5 eggs;
  • 1 tbsp. Sahara;
  • 2-4 tbsp. l. cream;
  • 1-3 tbsp. l. starch;
  • spices and fruits to taste.

Let's start cooking:

  1. Combine cottage cheese with sugar, cream, spices and starch and grind.
  2. Beat the eggs separately and add to the mixture.
  3. At this point the cream is ready and you can put it in the refrigerator for now.
  4. We combine the ingredients for the dough. Be sure to sift the flour with baking powder, so the cake will be crumbly. Grind, you should get crumbs.
  5. Divide the dough into two parts and preheat the oven to 200°C.
  6. Grease the mold with oil, pour out most of the crumbs, tamp down a little. Place all the cottage cheese on top, then berries (if used), sprinkle with the remaining crumbs.
  7. Set to bake for 40-50 minutes.

How to bake an unusual royal cheesecake?

1. To make the filling more tender, you need to increase the number of eggs, add sour cream or yogurt, as well as semolina, pudding or starch.

2. An unusual way to serve the pie is with fruit sauce. While the pie is baking, a sauce is made from fresh fruits by boiling them in a small amount of water and sugar. Drizzle the fruit sauce over just before serving.

Vatrushka is one of the oldest traditional types of Russian pastries. There are many variations of this delicious pie. An inverted cheesecake cooks much faster than a standard one. And the dietary inverted cheesecake is even more useful.

On a note! An inverted cheesecake differs from a regular one in that when baked, the dough – the base – ends up on top, and the curd filling – on the bottom. After the pie is baked, turn it over: the dough will be on the bottom and the cottage cheese will be on top. In this case, the dough is prepared not for rolling, but with the consistency of thick sour cream.

Ingredients

Since the cheesecake consists of two parts, I immediately separate the ingredients.

For the basic test you will need:

  • whole grain flour – 125 g;
  • low-fat kefir – 120 g;
  • baking powder – 1 tsp;
  • vanillin – 1 g;
  • salt and sakhzam - to taste (taking into account that the filling will also be salted and sweetened).
  • egg white – 5 pcs.

For filling:

  • low-fat cottage cheese – 680 g;
  • egg yolks – 5 pcs;
  • sweetener and salt - to taste;
  • vanillin – 1 g;
  • black currants – 3 handfuls (about 100 g);
  • small apricots – 4 pcs.

On a note! I used fresh blackcurrants and apricots as a “summer” accent. I think you can use other berries and fruits: raspberries, strawberries, wild strawberries, peaches, apples... . The combination of berries and fruits is necessary, since fruits add natural sweetness and delicate aroma, and berries add sourness and a more pronounced, bright taste.

Preparation

Place the oven on preheat.

We start cooking by cutting the fruit. I chopped the apricots into cubes similar to the size of currants. After cutting, mix the fruits with berries. You can sprinkle them with a little vanilla or cinnamon.

Separate the eggs into whites and yolks. The yolks will mix with the cottage cheese, so place them immediately in a large bowl for the future filling. Egg whites are used in the crust, but they will be whipped first. So we pour the whites into the container in which you will beat them.

Mix kefir with vanillin, sakhzam, salt, baking powder and flour. This is for the base. The mass will be plastic, thick and soft.

Mix the whipped whites with the flour mixture. The dough will become more liquid, but still viscous, as well as airy and porous.

Now we form a healthy cheesecake: put the curd mass on the bottom of the mold (densely, in an even layer, because upon completion of cooking this will be the top of the pie), then a fruit and berry layer, and pour the dough onto it.

Place the mold in the oven at 180-200°C. Bake for 40 minutes. After the time has passed, I recommend cooling the cheesecake in the oven and removing it after 2 hours.

The crust on top will be crispy and golden brown. You need to move it down. To do this, take a plate, place it on the mold with the cheesecake bottom up and turn this entire structure over.

Diet cheesecake turns out aromatic, thanks to berries and fruits, cottage cheese suppresses excess berry acid, making the pie more tender, creamy, and the dough saturates, “domesticates”. The family will be glad to be invited to tea and will be pleased with the delicious, healthy homemade cheesecake with apricots and currants.
