What is jelly?

This is a truly authentic French sweet dish, which became famous thanks to the advent of carefully purified, colorless and tasteless bone glue - gelatin with strong gelling properties. Previously, jelly was made from fruits, berries, melons, watermelons, and even from plants and flowers. In past centuries, confectionery circles heard about a certain sweet dish called “blancmange”. Now such a word has fallen out of use, and both sweet foods have been combined into one concept - jelly (the term “trembler” is popularly used).

It’s not at all difficult to prepare it at home if you use your imagination and experiment with the ingredients.


Composition, benefits and harm

Orange jelly is a completely light, refreshing dish. It tastes sweet, but with a slight sourness. After a hearty, rich lunch or dinner, it would be right to serve orange peel jelly. This will be the perfect end to the holiday table. And in hot weather, such sweetness can cool the body and give a lot of pleasure.

It has long been known that orange is considered one of the most delicious among the fruit family. In addition, it is also on the list of the most useful. Using the orange “friend”, ancient physicians treated kidney and intestinal diseases. Various combinations of products with the bright orange fruit are still used in folk medicine to this day. Orange contains ascorbic acid, pectin and fiber. Thanks to this composition, the functioning of the digestive system is improved and the immune system is strengthened.


There are 43 calories per 100 g of product, of which 0.9 g of protein, 8.1 g of carbohydrates and 0.2 g of fat.

General instructions

To understand how to prepare orange jelly, you must first understand the general techniques for preparing such a product.

The kitchen creation of a gelatin-based dessert follows the same pattern. The main components are water and gelatin. Pour gelatin powder into cooled boiled water at the rate of 1 tablespoon per 7 tablespoons of water, and leave to swell for about an hour and a half.

You can keep it for about half an hour, and then simply melt it for a couple, or soak it in a lot of water, and when it swells, drain off the remaining liquid.


How to cook sugar syrup?

To do this, you need to mix sugar with the liquid from which you plan to make jelly: it can be juice, milk, cream, yogurt, etc., and bring it all to a boil. Put the soaked gelatin glue into the finished syrup, stir until completely dissolved, and repeat the procedure, but do not boil.

Pour the boiled syrup combined with the jelly-like mass into molds, leave to cool, and then place in the freezer or refrigerator for 3 hours until completely solidified. Before serving, it is recommended to immerse the form with the frozen dessert in hot water for a while, then shake. Serve in a large bowl and cut into pieces.



Recipes

Classic recipe with gelatin

We will need: 4 oranges, 250 g of gelatin and 250 g of sugar.

Fill a 250-gram package of gelatinous substance with cool water and wait for the time recommended on the bag. Now we squeeze the juice out of the fruit we are using, and cut the cut crusts into large slices. Next, put them in a saucepan, bring to a boil and cook for about 20 minutes. After removing the mixture from the heat, cool to 60 degrees. After this, we send the already swollen gelatin and sugar to the cooled crusts. As soon as it starts to boil, immediately pour in the resulting juice.

Carefully pour the boiled syrup into the prepared molds and leave to cool for 7 hours.


Milk-orange “trembler”

If everything is done correctly, the dessert will turn out striped, tasty, with a pleasant aroma.

Ingredients we need: 4 oranges, a liter of milk, 400 g of sugar, 40 g of gelatin, 700 ml of water and 20 g of vanilla sugar.

We thoroughly wash one half of the oranges and remove the zest from the fruits.


We extract the juice from the remaining “naked” fruits. Don't forget about the peels of the second half of the citrus. But we already cut them into large pieces, fill them with water and boil for 20 minutes. The resulting broth should be thoroughly strained and cooled to 50 degrees. Pour sugar and half of the swollen powder into the cooled mixture. Just bring it to a boil! Pour the squeezed juice into the hot mixture and remove from heat.

Mix vanilla sugar with milk, put on low heat, do not forget to stir regularly. Pour the second half of the gelatin into the resulting mass.

For the finished jelly, use a mold. The first layer will be orange, so pour the orange mixture onto the bottom and put it in the refrigerator. The second layer will be milky, fill it in, and let the base cool. And we repeat this until the form is filled to the top. Upon completion, place the finished jelly in the refrigerator for 7 hours.

After hardening, use a little secret: lower the mold into hot water for a couple of seconds and turn the dishes over. That's it, now your striped orange dish is ready. Serve in slices.


Orange-lemon jelly “Moscovite”

You will need: 4 oranges, 2 lemons, 4 glasses of water, 2 glasses of sugar, 2 tbsp. spoon of gelatin.

The secret of the sweet dish lies in the following - the inside should be thick, and the outside should be frozen. The appearance of the dessert is not inferior to its taste. The sides are snow-white, and if you cut it, you will see a bright, almost glowing orange filling. In the old days, housewives and cooks resorted to using a special Muscovite form, but, unfortunately, little is known about it today.

In order to cook the syrup, you need to mix water with sugar, add all this with thin straws of lemon and orange peel, and add the ready-made gelatin mass. As soon as it starts to boil, add lemon juice, then orange juice. Strain through several layers of gauze, cool and put in the freezer to harden.

So, our dish has frozen, now we close it with a lid, put it in a bowl where you need to put ice and salt, and turn it in different directions until the sides freeze. Upon completion, dip the finished sweet dish directly into a container of hot water. Now you can put it on a special dish. Ready to serve!


Dessert in orange

Perhaps such an extraordinary way of preparing dessert in the fruit peels of the orange itself seems complicated, but it’s the other way around.

Ingredients: 4 oranges, 30 grams of sugar, 30 grams of gelatin, 150 ml of water.

As usual, fill the package of “confectionery glue” with a small amount of cool water. Sprinkle thoroughly washed orange fruits with boiling water. Now we begin to prepare the molds from the peel: cut the oranges into even halves, squeeze the juice out of them, and peel the pulp. Add the required amount of sugar to the remaining juice. Warm up the gelatin that has swollen during this time. As a result of mixing juice and gelatin, we obtain a homogeneous mass. Place the cooled mixture in the resulting orange molds and place in a cool place for several hours.

Cut the already frozen halves into slices, it will turn out not only tasty, but also beautiful.


Orange and kiwi sweetness

The recipe includes: 6 oranges, 2 kiwis, sugar, gelatin, lemon, 5 tablespoons of liqueur, orange juice.

First, completely peel the oranges to pulp: remove the peel, white layer and film. We leave the squeezed nectar in the glass - we will need it later. Place a pack of gelatin gel in a container with cool water. Add sugar, a few tablespoons of liqueur and lemon juice to the orange juice. Mix the soaked gelatin glue with the resulting juice. Place the sliced ​​orange pieces in a round mold, you can arrange them in rings, fill them with jelly mixture and place them in the coldest corner to cool for 5 hours. Before tasting, we recommend immersing the finished product in a bowl of warm water.

Secondly, it is useful, since when preparing jelly in this way, all vitamins are preserved, and for the most part, the jelly is natural orange juice.
Recipe for orange jelly, of course with step-by-step photos.

Ingredients:

  • 2 oranges
  • 15 g gelatin ~ 3 level teaspoons
  • 6-8 teaspoons sugar (to your taste, so taste)
  • Let's start cooking.
    Pour gelatin with boiled cold water, approximately 125 ml (half a glass) and set aside, let it swell.

    Wash and wipe the oranges, cut them lengthwise into 2 halves and carefully remove all the pulp with a spoon without damaging the peel.
    It should look like this.
    If you accidentally damage the peel, it's okay. Place a few drops of the prepared jelly on the tear site and place in the refrigerator for a few minutes. The jelly will harden and you can safely fill the halves, nothing will leak anywhere.

    Then put the pan with gelatin on the stove, bring to a boil and immediately remove, i.e. don't boil.
    Pour orange juice into it, add sugar to taste and mix.
    After that, take glasses or cups, put orange peels on them and fill them. This way, the peel will not roll around on the table and the jelly will not spill.
    Well, put it in the refrigerator so that the jelly hardens. In this case, the jelly froze in 3 hours.

    First of all, let’s soak our gelatin by pouring 100 ml of cold boiled water into it for 20 minutes.


    Next, cut the oranges in half into two equal parts.


    Let's extract all the pulp from them, from which you need to squeeze the orange juice.


    After the gelatin has swollen, pour it into an enamel bowl and place on low heat. After bringing to a boil and checking that all the gelatin has dissolved, pour in the orange juice and add the sugar.


    Stir all the contents continuously until the granulated sugar is completely dissolved.
    We place our empty halves of oranges on glasses so that after filling them with liquid, they stand steadily without turning over. Pour the finished mixture into orange “molds”.

    The remaining liquid can be poured into a glass bowl. Place in the refrigerator until the orange jelly hardens.
